Quick and easy Pea & Courgette soup

A few nights ago I came home it was cold I hadn’t been to the shop and I really fancied something warming and tasty but now! Yea you guessed it was hangry and a hangry man is not a good one.

So I managed to get my head together for a second whilst my primal urges for food where surging and I thought how a lovely courgette soup would work wonders. Only problem is it usually takes ages to whip up a good soup, oh no no my friend I thought I’m having this now and I know how to sort it!

So the recipe below is the outcome of that and I can be done in under 10 minutes.

INGREDIENTS (makes one bowl)

  • 1 courgette
  • 1 small shallot
  • 1 new potato
  • Half of the bowl you are using worth of frozen peas
  • A knob of butter
  • 50ml milk
  • water
  • Salt & Pepper

EQUIPMENT

  • blender

Method

So nice and simple to start, chop up all the courgettes, potato and onion. These then get put in to a microwaveable bowl with the peas and blasted for about 5mins in a 900w microwave, until the potato is starting to soften.

After that simply pop all of that and the rest of the ingredients into a blender and blend on full until silky smooth.

All you need to do after this simple quick recipe is sit back relax and slurp away. Then everyday you want a super easy simple warming soup come back here and enjoy!! Booyah!
