Katsukarē (curry) Noodles

This is a me of those dishes that once mastered you want to do over and over again!

Ingredients

  • 1 carrot diced
  • 1 onion diced
  • 1 tsp cumin powder
  • 1 tsp gram masala
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • Plain flour
  • 1 tsp butter
  • Veg stock cube
  • Oil
  • Salt
  • Pepper
  • Noodles of your choice
  • Pork chop
  • Panko breadcrumbs
  • 1 Egg (beaten)

Method

  1. In a medium heat pan put a drizzle of oil and the butter, then fry the onion and carrot until just catching.
  2. Add the flour to the pan stir in until combined and then add all the spices. Add 300ml of water, stir bringing to a rolling boil and cook for 10 minutes adding extra water if needed.
  3. Transfer to a blender and blend until smooth.
  4. Take the pork chop, put between two pieces of cling film and flatten with a rolling pin. Cover in the flour, then the egg and finally in the Panko.
  5. In a pan add a centimetre of oil, then fry the chop on both sides for 3 minutes each.
  6. Finally boil your noodles and combine everything together. Top with doing onion and crispy onions if you have them.
